Vinification
Destemmed at 25 to 50% / Fermentation for 12 to 14 days / Daily Pump-over or punch-down (only few ones) Maceration at controlled temperatures Complete malolactic fermentation.
Tasting notes
Deep, vibrant ruby with violet reflections at the rim. Wonderfully expressive, floral, and precise, capturing the classic "Queen of Beaujolais" character.
High-toned aromas of fresh violets, red peonies, and wild strawberries burst from the glass, underpinned by dark raspberry and a subtle, smoky, crushed-granite
minerality. The partial whole-cluster inclusion adds an attractive touch of white pepper and herbal bramble complexity. Silkiness personified on the palate. It is
light-to-medium-bodied but possesses remarkable depth and intensity courtesy of the 80-year-old vines. Pure red cherry, pomegranate, and red currant flavors dominate,
framed by fine-grained, elegant tannins and a refreshing, crunchy acidity. The influence of the large foudres provides a seamless texture without imparting heavy
oak flavors, leading to a lifted, perfumed, and mineral-flecked finish.
