Tasting notes
Refreshing and mineral front end, well-integrated and delicate tannins, fruity aftertaste. Nose has primary notes of small red fruits like strawberries and raspberries,
hints of withered violet. Pairing with maltagliati with rabbit ragù, risotto with taleggio, pears and nuts.
Vinification
Maceration with skin contact with short and soft pumping over the skin cap, racking a few days after the fermentation.
