Description

2025 vintage was a fantastic growing season for white wine varietals, noted for it's mild spring, summer and fall. While the vineyards still received the usual, abundant amount of sunshine, the lack of 100+ degree highs during summer and fall helped retain a high level of natural acidity in the berries. Weather conditions during harvest were also excellent. We experienced no heat bubbles, which kept our night time temperatures to a range of low to mid 50’s, perfect for our night time picks. Looking back, 2025 vintage will likely be regarded as a wet vintage. However first rains did not occur until the first week of October, well after all the Sauvignon Blanc were harvested. Picking brix for this year’s Sauvignon Blanc averaged between 22 to 23 brix.

Harvest

This Sauvignon Blanc blend consists of two different lots. The first located from a vineyard just south of the winery and the grapes were harvested at the end of August. The second vineyard is located in the Moklumne River, Borden Ranch and Sloughhouse sub-AVA's of Lodi, and those grapes were harvested in the middle of September. The grapes sourced from the Molkumne River vineyards range from 10 to 15 years old, while the Borden Ranch and Sloughhouse vineyards have vines ranging from 20 to 25 years.

Tasting notes

Pale, straw yellow color. Fresh aromatics of grapefruit, pomelo and fresh cut grass. Bright acidity pops on the palate paired with a touch of minerality and salinity that adds complexity to the taste.

Vinification

We press our Sauvignon Blanc whole cluster, so that less pressure is required to squeeze the juice out of the berries. Fermentation occurs in 100% stainless steel tanks, with temperature controlled between 50 to 58 degrees Fahrenheit. Fermentation lasts usually between two to four weeks. To retain all the natural, bright acidity, we do not undergo malolactic fermentation in this juice. For yeast, we chose a strain specifically designed to highlight the grassy and citrus fruit characters of Californian grown Sauvignon Blanc.
